Mom’s Apple Pie

A little cliche, but this is Mom’s apple pie.  I know it is somewhat out-of-season.  I intended to post this in November but hey- can you ever go wrong with apple pie?

6-8 Apples- you choose your flavor
Zest of 1 lemon
White sugar (1/2 cup or so)
Brown sugar (1/2 cup or so)
Cinnamon
lemon Juice (from the lemon you zested)
Butter
Pie crust (it’s ok to buy these)

Place first pie crust in pie tin.  Cut apples into 1″ cubes.  I leave the skin on but you can remove if you like.  Add to a large mixing bowl with the lemon zest & juice, sugar and some cinnamon (I’m aggressive but to your taste)

Pour this mixture into the pie crust.  Pile it high as the apples will shrink dramatically.  Add small bits of butter all around the apples- you can’t go wrong, maybe a tablespoon?

Next cover with the second pie crust, crimp edges and moisten top slightly then sprinkle sugar and cinnamon on top.  Cut vents as you like.

Bake at 425 for 20 minutes then turn down to 375 for 30-40 minutes.  Sometimes I will put foil on the top if it browns too much.
